A Valentine Treat

I had big plans yesterday to make these beautiful Valentine’s Day cake balls and share them and clear instructions with you here today so that you could make them for your loved ones tonight just in time for the big day tomorrow. I thought it would be super cute to do strawberry cake with chocolate coating and then chocolate cake with pink coating.

Well, I made them and they didn’t turn out great even though I “perfected” the method two weeks ago. But this is real life and I want my blog to reflect that so instead of scrapping the whole post, I’ll guide you through the process–it’s actually pretty easy–and where I went wrong.

You’ll need:

  • 1 box of cake mix (and whatever ingredients it calls for)
  • 1 container of frosting
  • bag of chocolate chips
  • vegetable oil
  • food coloring (optional)
  • decoration of your choice (sprinkles, nonpareils, M&Ms, whatever)

Directions:

  1. Prepare cakes according to package directions.  Let cool completely. [The cooling is important.  The first time I didn’t let them cool enough and it didn’t turn out great.]
  2. In a large bowl, crumble cake until fine. 
  3. Add frosting and mix to combine well.  [Usually the ratio is one container frosting to one box of cake mix. However, with the strawberry cake I made one container was too much. So I recommend starting with about half the frosting and going from there.]
  4. Roll the cake mixture into balls and set on cookie sheet. [I like to use a 1 tbsp measuring spoon to help here.] Update: you can use a small cookie scoop for this step, my friend Amanda did and it saved her a ton of time.  I’ve thought about buying one but didn’t want to part with precious “household/personal items” money.  But I think I might have to invest.  Considering I’ve made about 4 batches of cake-balls and see many more in my future, it will be worth the six bucks.
  5. Put in freezer for 30 minutes or more.
  6. Melt chocolate chips and mix in vegetable oil (and food coloring if desired) in a double boiler. Use 1 tbsp vegetable oil for 1 cup of chocolate chips. [Double boiler: heat pot of water on stove and put a glass bowl on top.  The steam will heat the glass and the chips will melt.] Update: What does the vegetable oil do, you ask? It thins out the melted chocolate to make it easier to work with.
  7. Once chips are melted, pull cake balls out of freezer and dip each one in chocolate until fully coated. (I use a combination of spatula and fork to assist here.) Put back on sheet and sprinkle with decoration of your choice.
  8. Pop back in freezer about 15 minutes to harden chocolate.
  9. Enjoy!

Notes/Advice:

  • Leave enough time to complete this project.  Maybe like an afternoon or spread it out over an evening. Update: I’ve crunched the numbers and you probably need about 4 hours total for this project.  I’d say only an hour/an hour and a half is work time.
  • You can also use almond bark or the melting chocolates that they sell at craft stores.
  • Be sure to chill the balls before dipping them in the chocolate.  If you don’t the cake can start to crumble off into the chocolate and it’s just messy and difficult.
  • My love for cake balls started when my co-worker brought them in. He is engaged to Miki from Miki’s Kitchen and my team often gets to taste Miki’s latest creations. Miki has a great tutorial for how to make cake balls and cake pops.
  • Have fun with this and don’t get frustrated. Even if they don’t look that great, they’ll taste delicious.  And sprinkles make everything prettier!

Happy hearts and happy bellies

Sitting across from my best friends at breakfast Sunday morning, I’m struck by how beautiful they all are and how lucky I am to have them in my life. Yes, they are all pretty women, I’ve always known that. But over the past year or so I’ve realized that my friends are all around beautiful people: they are strong, smart, funny, kind, driven, loyal, caring, comforting people and my life wouldn’t be the same without them in it.

In high school and through college I think I took my friends for granted–often opting to spend time Mike and his friends instead of my girlfriends.  It’s not until I graduated from college and moved away from them all that I realized how precious friendships are, how much girlfriends add to your life.

We had an amazing weekend together.  Planned about a month ago to celebrate Jordyn’s birthday and her return to the east coast (she moved from LA to DC in January), we were all so looking forward to the girl time. We each had our own reasons for looking forward to the trip, and I think it was exactly what we needed.

The girls got to DC on Friday night and the grown-up slumber party began with dinner at my apartment. (I made this.) Having us all around my kitchen table was a bit surreal. If it was in a movie a slow happy song would play as the camera slowly pans over each of our faces as we smile, throw our heads back in laughter, and raise our glasses for a toast. It’s crazy to think that we’re all adults now and our conversations focus on work, serious relationships, being moms some day, finances, goals, and dreams.

Saturday morning my living room was covered in air mattresses, blankets, and luggage just like my bedroom was in middle school when these slumber parties began. I made my favorite pancakes and we went to my favorite yoga class. We got back around lunchtime and Mike made us all homemade pizza. Then we just veged in our gym clothes for the afternoon, read magazines, books, took naps, watched a movie. Because we really didn’t have to do anything.  We just wanted to be together. 

We put ourselves together on Saturday night for a night out on the town. We had an 8 o’clock reservation at Zaytinya and after two sketchy cab rides we all arrived at our destination. We shared a few carafes of the Pom Fili (white wine, vodka, and pomegranate juice) and sampled a lot of menu items: salads, fritters, spreads, meats. We left dinner with happy hearts and happy bellies.

Next, we headed to POV at the W Hotel just a quick walk away from the restaurant.  We felt pretty baller walking in and when we got to our table I was so excited we were there.  POV, the rooftop bar, is one of my favorite places in the city and I’d been wanting to take girlfriends there for a while.

Unfortunately, our stay was short-lived.  As we began ordering our first drinks, the server said “did anyone tell you about the policy?” “No,” we said, “what policy?” “It’s a $50 per person minimum or you have to do bottle service.” WHAT?!?! Since we were all pretty full and not wanting to spend $60 on drinks alone, we left our table and headed back to my neighborhood. We had a drink at a neighborhood bar before coming back to my apartment, making Pillsbury cinnamon buns, and going to bed.

And so quickly it was Sunday morning.  Of course, I had to take my friends to my favorite breakfast place: Open City in Woodley Park. As we chat over coffee, I get a bit emotional at the joy of the experience and wish that I could be surrounded by these girls all the time.  These are girls I’ve liked since middle school but have come to truly admire in the past few years.  Luckily, the conversation quickly turns to when we can have another weekend like this and we brainstorm places we can travel together.

As I gave them hugs at the train station, I had to fight back tears.  I really hate to see them go.

Luckily, one’s still here for good and we’re already planning our next girls weekend.

What's for Dinner? Wednesday: Risotto

Back with another What’s for Dinner? Wednesday! Tonight I’m sharing one of our favorite meals to make together and eat together: red wine risotto with peas!

Risotto is a great meal to cook with someone.  Not because it’s extremely complicated (it’s not really at all) but because it’s a time consuming meal and gives you time to chat in the kitchen (without the distractions of phone, computer, TV). It’s pretty much just stirring constantly for 25-30 minutes and it’s nice to have someone to keep you company.  Oh, and you put like a cup of wine in the recipe and drink the rest 🙂

Mike and I love to make risotto together because it gives us time to connect. We’ll take turns stirring and sitting, talk about things that are on our minds, and drink wine. Sometimes, though, much of the conversation is “mmm, this is going to be so good” or some variation of that statement.

Risotto is really just a fancy comfort food.  It’s warm, creamy, and you eat it out of a bowl with a spoon. What’s not to love?

Our go-to risotto is Giada’s red wine risotto with peas.

What's for Dinner? Easy Friday

Happy Friday!

Is it just me or was this week particularly tiring? I’m glad we don’t have any plans tonight and can just relax at home. I was super tired this morning, perked up a little bit this afternoon, and now I feel like I’m crashing again. Though there are a bunch of things I’d love to do tonight, I imagine I’ll stay on the couch watching shows on DVR or maybe we’ll get Moneyball onDemand.

Anyway, back to What’s for Dinner?.  Tonight’s dinner was super quick and easy, perfect for a Friday night after a long week.

I bought these apps at Trader Joe’s for the book club meeting I hosted here on Wednesday night (we read The Happiness Project, in case you’re wondering) but we had so much food we didn’t need them. So I figured what a perfect Friday night dinner. This took all of 15 minutes to prepare and the clean up will be minimal as well. And who doesn’t love finger foods?

What's for Dinner Wednesday: Date Night

Back again with another What’s for Dinner? Wednesday and tonight happened to be date night! We haven’t had date night in quite some time: either since my birthday date or when we went to the Nationals’ game. It’s one of my 2012 resolutions to go on one date night per month so tonight not only did I have a nice dinner with my husband but I also got to check a box on resolutions spreadsheet. Win-win!

Mike’s trying to “get into sushi” and we had a Living Social deal for Sushiko in Chevy Chase (Friendship Heights) that expires at the end of the month so we decided to go to Sushiko for our first date night of the year.

We started with some drinks: a rum and Coke for Mike and a mangotini for me.

Then I had a house salad with ginger dressing to start (which I pretty much inhaled and then had to tell myself to slow down, that I’m not in an eating contest, I’m on a date).

Next we ordered two rolls to share: the rock shrimp cilantro and the crunchy spicy salmon.  Mike chose both of these and I was happy to oblige.  Sometimes it feels so good to just trust your partner’s judgement. And it paid off.  Both rolls were delicious. The cilantro in the rock shrimp cilantro roll was so bright and fresh, it was awesome!

We topped off our meal with a soft shell crab roll.

Good meal.  I imagine we’ll be back again soon.

I’m glad we both enjoy sushi now.  Sometimes if we need a quick dinner we’ll stop at Whole Foods and grab some out of their pre-made case. It’s so funny how tastes can change.  If you would’ve told me 3 years ago that I’d like sushi by now I probably would’ve said you’re crazy.

I still kind of struggle while eating it though.  I feel like it’s a lot to put the whole thing in your mouth at once but it’s really poor sushi etiquette to not take it all in one bite.  (I learned that on a Bobby Flay Throwdown I think).  And honestly it just looks bad if you don’t. But I feel like it’s a lot to get down and I start to swallow it before I even get to taste it. Does anyone else have this problem?

What's for Dinner? Wednesday: How Sweet It Is edition

Happy Hump Day! Aren’t long weekends great?  Having an extra day or two to relax and unwind is a wonderful thing.  But long weekends are a gift that keeps on giving: a short work week before or after.

But after two short weeks of work, the last two days in my office have had me feeling wiped out by 3:30. All I wanted to do when I came home today was take a nap.  After my 15 minute power nap on the couch, I was still pretty drained so I was happy to see that the meal we had planned for tonight was actually pretty speedy.

Me, as we sit down at the coffee table to eat: “Wow, this is going to be soo good.”

Mike: “Yeah, where’d you get this recipe?”

Me: “Where do you think?”

Mike: “How Sweet It Is?”

Me: “Uh, huh.”

[I get most of my recipes here so this is no surprise. Like the sangria and cookies I made for NYE, the fish sticks we had for dinner earlier this week, and the crockpot recipe we’ll have tomorrow or Friday.]

Me: “Don’t you love Jessica?”

Mike: “Yeah, is she single?”

What?! Isn’t my referencing her blog and bringing her delicious recipes into your life enough? I mean, I know she has a good sense of humor but come on!

So anyway, this is what we had for dinner:

BLT Salmon Tacos

These were really good, though I think I’d have much more to say if I hadn’t literally inhaled my first one.  Yeah, I kind of felt overwhelmed after that.

After Mike wolfed down his tacos in like four bites: “Mmm, yeah, that’s a keeper. I’d definitely have that again. That would be good in the summer too.”

Remember when I told you to make “try one of Jessica’s recipes” one of your new year’s resolutions? Yeah, I meant that.  Have you?

For dessert, we shared a Karen’s Birthday cupcake from Baked and Wired that I picked up on a lunch walk with my friend Allie.

And, I just put in the last 5 loads of laundry from our bed bug situation.  Good. Day.

 

 

These days

Today’s post is a list of random things I’m doing/thinking about/loving right now.  Thanks to Heather and Clare for the inspiration!

1. I can be found mouthing the lyrics to these songs at the gym.  Though they make me want to sing out loud, I reign in my excitement at the gym.

2. I’m loving smoothies right now.  In November one of my goals was to eat one fruit and one veggie per day. Check off that fruit!

Favorite recipes:

  • Mixed berry–1 cup low fat plain yogurt, 1 cup frozen mixed berries, 1 tsp vanilla, 1/4 cup milk, and 1/2 tbsp sugar (though add to your taste) in the blender.
  • Strawberry Peach–1 cup low fat plain yogurt, 1/2 cup frozen strawberries, 1/2 cup frozen peaches, 1/4 cup milk, and honey to taste (my taste is 1 tbsp) in the blender. Each of these makes one.

3. Inspired by Jess‘ post about writing a letter to herself, I’m working on my intentions for 2012, thinking about where I want to be come January 1, 2013, and what I want my life to look like.  I’m really enjoying this exercise; it makes me hopeful for what 2012 will bring.

4. I’m looking forward to driving home with Mike today and belting singing Christmas songs.

5. I really want to make this pomegranate vanilla sangria.  I’m brainstorming events I could make this for. Any ideas?

6. One of your intentions for 2012 should be to make some of Jessica’s recipes.  I’m not kidding.

7. I’m about halfway through The Hunger Games and I’m really enjoying it so far. I just got to the part where the games begin.

8. This tea is my go-to when I feel like I’m getting sick.  It’s like a miracle worker. Knocks a cold right out.

10. Speaking of my readers: Before we knew that our bites were coming from bed bugs, I wanted to post a picture of the bites and see if any of you knew what they might be. What's for Dinner? Butternut squash stuffed shells

I just finished my last bite and had to share this meal with you immediately.

We made Jessica‘s Roasted Butternut Squash and Sweet Potato Whole Wheat Lasagna a month or so ago and absolutely loved it.  So I was excited to try the stuffed shell version and it didn’t disappoint. You take a bite and the squash is creamy and buttery and garlicky. Delicious. If you’re more of a penne person, try the penne version.

I think this is going to be a go-to recipe in our house.

What's for dinner?

What’s for dinner? must be one of the most frequently asked questions between a married couple.  It’s definitely one of Mike’s favorite questions.  During high school, he’d call his dad at work almost every day after school to ask him what was for dinner.

What’s for dinner is also the title of a new series here on Things After the Rings where I’ll share what we’re having. And you’re in luck, today I have two meals to share.

Tuesday night we had grilled cheese and tomato soup, a quick, easy, comforting meal that is perfect for a chilly fall night.

Must use Land O’Lakes American Cheese, the taste is just so much creamier than other American cheeses. [Please do me a favor and give up on Kraft singles.  They’re not even real cheese and they taste terrible.  Believe me, you’ll thank me for it.]

I like mustard on the inside of one slice of bread.  Real butter is a must too.

Last night we had curried chicken and rice.

I was tutoring one night and this dish was cooking on the stove as worked.  It smelled amazing so I asked the mom for the recipe. Here it is:

Fast Curried Turkey with Rice serves 4-6, total time about 30 mins

  • 2 T butter, margarine or oil – your choice [of course I vote butter]
  • 2 tsp curry + ½ tsp cinnamon + pinch cloves
  • 2 cups diced onion
  • 1 lb. boneless turkey or chicken breast meat, cut into 1-inch cubes
  • 1 apple, peeled and diced (or use a green apple & don’t bother peeling)
  • ½ cup golden raisins
  • 1 cup long grain or Basmati rice
  • 2 cups chicken stock or water, or combination
  • 1 cup frozen peas, thawed

Heat a 2-quart heavy saucepan over medium heat. Add the butter and melt, then add the curry mixture.  Cook for 1-2 minutes, until spices become fragrant. Add the diced onion and sauté until soft and golden.  Add the turkey, apples and raisins and sauté for 5 minutes, stirring occasionally.  Add the rice and stir. Add the stock/water, bring to a boil and cover. Cook on medium-low heat until the rice has absorbed all the liquid, about 20 minutes.  Add the peas during the last few minutes to heat through, then toss and serve.

Notes from the recipe I received:

You can eat the peas separately if you prefer. Another tip: if you cook it too long with the peas, they’ll get dull green and mushy. If you prefer green and crisp, add them right before you’re going to eat.  If you are a fan of Indian food, this dish goes well with yogurt and cucumber raita, or Greek tzatziki.

My notes:

Though it’s not spicy, it has a nice heat to it. I would definitely recommend serving it with raita or tzatziki on the side as suggested above. The first time I made this I let it simmer too long and it was a bit dry.  Last night I let it simmer for 15 mins plus a few more mins for the peas and it turned out better.
